Abstrak :
Industri Pertanian menjadi leading sector program sustainable development goals (SDGs) yaitu pada produksi dan konsumsi yang berkelanjutan. Salah satu indikator program produksi dan konsumsi yang berkelanjutan adalah  Food Loss dan Food Waste (FLFW). Produk pertanian yang memiliki potensi yang sangat luas yaitu cabai rawit. Tetapi cabai rawit merupakan produk yang mudah rusak. Tantangan yang dihadapi para pemegang kepentingan di sektor pertanian dalam mewujudkan program SDGs adalah bagaimana memenuhi permintaan pasar dalam menyediakan cabai rawit yang berkualitas sehingga potensi FLFW bisa dihindari. Sehingga penelitian ini dibuat untuk pemegang kepentingan rantai pasok cabai rawit dalam memodelkan permasalahan tersebut. Penelitian ini melakukan prioritasi aksi pengurangan FLFW dengan menggunakan manajemen risiko, lean supply chain, dan system dynamics. Peneliti memberikan rekomendasi tiga alternatif strategi yaitu contract led by collector, contract led by cooperative, dan contract between farmer and Retailer. Hasil dari simulasi model menunjukkan bahwa strategi contract led by collector menghasilkan penurunan FLFW tertinggi. Sedangkan contract between Farmer and Retailer merupakan strategi yang paling tidak signifikan dalam berkontribusi terhadap penurunan FLFW. Model pada penelitian dapat dijadikan sebagai model dasar untuk kasus yang serupa pada produk pertanian lainnya dan memiliki potensi yang besar untuk dikembangkan lebih lanjut. ......The agricultural industry is the leading sector for the sustainable development goals (SDGs) program: sustainable production and consumption which one indicator of it is Food Loss and Food Waste (FLFW), especially in agricultural products. One agricultural product with vast potential to reduce its FLFW impact in Indonesia is cayenne pepper, a perishable product. The challenge faced by stakeholders in the agricultural sector in realizing the SDGs program is how to meet market demand by providing quality products in an efficient and effective supply chain system to avoid the potential for FLFW. This research aims to find the best strategy to establish this system. This research prioritizes the strategy for FLFW reduction using a combination of three perspectives: risk management, lean supply chain, and system dynamics. The findings recommend three alternative strategies: a contract led by collectors, a contract led by cooperatives, and a contract between farmer and retailer. The model simulation results show that the led-by-collector contract strategy produces the highest FLFW reduction. In comparison, the contract between Farmer and the Retailer is the least contributing strategy. Furthermore, the model in this study can be used as a basic model for similar cases in other agricultural products and further development.

Peluang mengembalikan kejayaan industri coklat Indonesia di level dunia masih terbuka luas dengan mulai bertumbuhnya industri artisan coklat yang memiliki posisi yang baik dalam menggerakkan industri yang ramah lingkungan dengan produk yang berkualitas tinggi dibandingkan dengan industri coklat komoditas yang telah lama dikenal praktik produksinya yang tidak berkelanjutan. Industri artisan coklat turut mendorong semangat petani kakao untuk mendapatkan pendapatan yang lebih tinggi dengan pemenuhan standar kualitas. Pemerintah telah mulai melirik dan mendorong sektor industri artisan coklat ini untuk bertumbuh. Penelitian ini mengembangkan sebuah model kebijakan dengan mempertimbangkan aspek keberlanjutan di sepanjang rantai pasok makanan pertanian yang memiliki karakteristik multi-aktor dengan menggunakan pendekatan model sistem dinamik dengan integrasi data kinerja lingkungan dengan pendekatan life cycle assessment. Hasil simulasi memberikan konfirmasi adanya saling pengaruh antar ketiga aspek berkelanjutan yaitu ekonomi, lingkungan dan sosial, terutama dari tiga skenario yang yaitu skenario kemakmuran ekonomi, kelestarian lingkungan dan kesejahteraan sosial. Secara umum hasil simulasi menunjukkan adanya peluang peningkatan kesejahteraan namun tanpa adanya dukungan tambahan dan insentif kepada petani, keberlanjutan sulit untuk dicapai. Sebagai tambahan, model kebijakan yang dihasilkan dapat dijadikan instrumen pendukung keputusan untuk pembuatan kebijakan pengelolaan rantai pasok sektor industri artisan produk makanan pertanian secara umum. ......The opportunity to reinstate the glory of the Indonesian chocolate industry at the world level is widely open due to the growth of the artisanal chocolate industry, which is well-positioned to move the chocolate industry in the direction of improved environmentally conscious production practices and higher-quality products comparing the commodity chocolate industry has been long recognized for unsustainable. The artisanal chocolate industry encourages cocoa farmers to earn higher incomes by fulfilling quality standards. The government has started to pay more attention and promote the artisanal chocolate industry sector to develop in the future. This study developed a policy multi-actor model based on a system dynamics approach by considering sustainability aspects along the agri-food supply chain by integrating environmental performance through a life cycle assessment approach. The simulation results of this model showed the mutual influence between the three aspects of sustainability, namely economic, environmental, and social, by examining three scenarios that are expected to meet the three sustainability principles: economic prosperity, environmental sustainability, and social welfare. The simulation also shows that although there are opportunities to increase welfare, sustainability is difficult to achieve without additional support and incentives for farmers. In addition, our policy model can be used as a decision-support tool, specifically in the chocolate industry and for similar artisan food and agriculture sectors that mostly have a similar supply chain.
