ABSTRAK Indonesia merupakan penghasil biji kopi keempat terbanyak di dunia. Pada prosespengolahan kopi dihasilkan limbah dalam bentuk pulp, mucilage, parchment dan skindimana limbah tersebut mengandung beberapa senyawa polifenol. Tujuan penelitianini yang pertama adalah mengekstraksi dan memisahkan senyawa polifenol dari kulitbiji kopi. Berdasarkan LCMS dan dibandingkan dengan literatur, kemungkinansenyawa polifenolnya adalah cianidin-3-glukosida dan quercetin. Selanjutnya,melakukan reaksi esterifikasi senyawa polifenol tersebut dengan asam phidroksibenzoat.Katalis heterogen yang digunakan untuk mempercepat laju reaksiadalah asam sulfat yang diimobilisasikan pada permukaan silika gel, SiO2-H2SO4.Silika gel pada katalis ini dipreparasi dari kaolin. Proses esterifikasi dilakukan denganvariasi waktu 6, 12, 18 dan 24 jam pada suhu 56 oC dan menggunakan pelarutaseton. Produk ester yang terbentuk memiliki bau yang wangi seperti perpaduanaroma bunga dan buah serta berbentuk minyak yang berwarna kuning. Berdasarkanhasil LCMS, kemungkinan ester yang terbentuk adalah quercetin yang mengikat 3asam p-hidroksibenzoat. Uji antioksidan dengan metoda DPPH menunjukkan bahwaradical scavenging produk ester lebih rendah dibandigkan dengan polifenol awalnya. ABSTRACT Indonesia is the fourth coffee beans producer in the world. The separation process ofcoffee beans produces waste in the form of pulp, skin, mucilage and parchment whichis contain polyphenol compounds. The purpose of this research was first to extractand separate of polyphenol compounds from this waste. Based on LCMS andcompare literature, the compounds probably are cyanidin-3-glucoside and quercetin.Aftar that, an esterification reaction was conducted on this compounds with phydroxybenzoicacid. Solid acid catalyst was used to accelerate the reaction, namelysulphuric acid immobilized on silica gel, SiO2-H2SO4. The silica gel for this catalystwas prepared from kaolin minerals . The reaction times of esterification were variedfor 6, 12, 18 and 24 h at 56 oC by using acetone as the solvent. The ester productsmelled like a combination of fruit and flower fragrance, and was in the form ofyellow oil. The LCMS results it was probably 3 molecule of p-hydroxybenzoic acidbinding on a quercetin compound. The antioxidant assay with DPPH method showedthe radical scavenging of ester products was lower than the initial polyphenolcompounds. |
